Herb Oven-Fried Tilapia


1/2 c. breadcrumbs
1/2 tsp dill
2 Tbsp. chopped fresh parsley
a pinch of garlic salt
1 egg, slightly beaten
2 Tbsp. flour
2 tilapia filets

Preheat oven to 450.
Combine breadcrumbs, dill, parsley, garlic salt in a shallow dish.
Place egg in a separate shallow dish.
Place flour in a third shallow dish.

Season filets with salt + pepper.
Dredge fish in flour, dip in egg, then dredge in the breadcrumb mixture.
Heat oil in a skillet over medium-high.
Add filets, and cook 2 1/2 min on both sides.
Transfer to oven for about 6 minutes, until fish flakes easily with a fork.

I served this with steamed broccoli and oven fries (Baked at 450 for 30 minutes, turning every 10 min. Tossed in olive oil, Lowry’s salt, pepper, and chili powder.)
